Food Mood: Fall is Coming, Curry is Needed!

Reno Ridiculouso:Month Five, Let’s Get This Train Back on Track

After six weeks of waiting to make sure that we’ve covered all our legal “givin’ a guy a chance ground”, we kick Bull Talker Contractor to the curb.  And still on the way out the door he’s all “It’s no big deal, I don’t know what you guys are so upset about!  It’s minor alterations… blah, blah, blah”.  Anyhoo… Moving on from that malarkey…

And even though we’re out some moolah at the moment and have to find a new contractor, the sense of dread lifts.  We can see the possibilities again and set to looking for new contractors with cautious (once burned twice shy) gusto!

Crockpot Red Curry Lentils
4 cups brown lentils (I must admit that I’m half assed about almost everything and have been known to use red or even (gasp!) green lentils)  Uh Oh.  That was a bracket inside a bracket!  My asides are getting out of control!! Save me!
1 diced onion
4 cloves garlic, minced
I tbsp. minced or shredded ginger
3 tbsp red curry paste or more if you like
1 tbsp garam masala
1 tsp turmeric
2 cans pureeds tomatoes or 1 can if you like it thicker
Some cayenne pepper or adobo chili pepper or smoked paprika, depending on your families tastes.  Which in our case means almost none due to kiddos weak palate.  😊
Put all this stuff in the crock pot and cook for 8 hours
At the end add a half can of coconut milk ( or a full can if you like) and reheat
Eat with some rice or naan

Or, if you're feeling ambitious, by some salmon from your local grocery store and then microwave some greenbeans and put it all on a fancy shmancy placemat, as above.  Voila!
